You’ve got it all wrong. You think that in order to be healthy, you’ve got to eat like a rabbit and be completely deprived and then spend countless hours on some silly treadmill machine where overall, you are going nowhere fast! I don’t know about you, but this does not sound like a fun way to live. I literally cringe at the thoughts. Yes vegetables and exercise are extremely good for you but there has got to be a better way, and there is.

Why am I so happy and healthy and full of positive energy? It’s because I have figured out the most enjoyable way to live that energizes me at all levels; mind, body and soul. One of those ways is to enjoy fabulous healthy desserts every day of my life. I enjoy decadent desserts that satisfy my most discerning sweet tooth craving without a single ounce of guilt. Why no guilt? Am I ignoring the fact that sugar is a disaster for our health, both physically and mentally? Not at all. Actually, it is the opposite. I am so clear on how the food choices I make affect both my mind and body. And, since I know what it feels like to feel fabulous every day of my life, I take those choices very seriously.​​

So, I’ve created countless ways to enjoy sweet treats and more but every one is made with truly healthy ingredients.  The ingredients are so tasty and so healthy, that it is actually good for you to eat my brownies!

Simple sugar in all forms can really mess up our health.  The American diet is so loaded with sugar everywhere you turn. Even so called “healthy” foods like breakfast cereal, salad dressings, and tomato sauce all have simple sugar added to the ingredients. This not only contributes to weight gain, type 2 diabetes, cancer, and inflammatory issues including autoimmune disease, but it also messes with our mood, emotions, and our energy. If I eat a simple sugar during the day, I notice I feel tired, irritable, and can’t concentrate, and this is no way to be.

Some turn to artificial sweeteners to get the sweet taste without the calories. This is even a bigger disaster for our health. Artificial chemicals are not to be consumed by the human body. Ironically, some of the doctors that I work with have told me that artificial sweeteners actually lower your body’s ability to feel satiated (full) after eating and you may often then overeat, which causes weight gain. I also worked with a young woman once who was experiencing MS-like symptoms such as nerve damage until we removed the artificial sweeteners from her diet and she recovered.

I could go on and on and reference all sorts of issues (blah blah blah) but we are here to have fun. Life is to be experienced and enjoyed to the fullest and one of my secrets is to enjoy great foods that make me feel great physically, mentally, and emotionally and this includes dessert.

I love to use whole fruit to create all sorts of yummy sweet treats. Do not fear fruit.  Fruit is your friend because it is loaded with fiber and antioxidants and nutrients that support good health. Whole fruit is completely different than simple sugars because of the way your body processes the food.  I also love to add nuts and seeds when eating fruit because the healthy fats and protein helps to balance any possible blood sugar swings.

My desserts also avoid the other issues with typical sweet treats such as bad fats, processed white flour, hormones, and cholesterol. Wow!

So, I’ve been on a brownie kick these past few weeks. I’ve served my healthy brownies and ice-cream (yes, my ice cream is healthy too!) to several health-minded groups that have visited my farm for luncheons, workshops and tours over this past month. I also demonstrated and spoke to thousands at various speaking engagements and everyone wanted my brownies!  So, I’m sharing the recipe with you here along with other great recipes that I’ve mentioned and served at my recent events.
