You can do the gourmet thing and make everything from scratch but if you want something healthy and super quick, try this simple yet amazing dish. This is great for large crowds since it is so easy to make. Be sure to serve it over brown rice or quinoa and accompany with a green salad for a nice hearty satisfying meal.
Ingredients:
- 2 25-ounce can of organic black beans drained.
- 2 16-ounce jars of any organic salsa you love
- 1 16-ounce bag of frozen organic corn
Optional
- Juice of two limes
- ΒΌ cup of cilantro
- chopped avocado
Preparation:
Combine beans, salsa and corn in a pot and cook for 20 – 30 minutes until heated through.
Optionally add a bit of lime juice and garnish with cilantro and avocado before serving.
