Sometimes it is nice to have a creamy style dip or spread that is not heavy in beans or nuts. This is a great raw food recipe that is very versatile.
- 1 zucchini peeled and chopped (you don’t need to peel if the green color is acceptable)
- 2 T raw tahini
- 2 T lemon juice 1
- /2 tsp crushed garlic (1 clove)
- 1/4 tsp ground cumin
- 1/4 tsp paprika
- 1/4 tsp salt
Place all of the ingredients in a food processor using the S blade and process. This will keep in the refrigerator for 5 days.
