Steamed Winter Squash with Broccoli and Cauliflower

This dish is so simple you really don’t need a recipe – but here it is anyway to remind you to combine these wonderful fall and winter veggies.

  • 1/2 Acorn Squash or winter squash of choice
  • 1/2 head of broccoli
  • 1/2 head of cauliflower
  • 1 -2 cloves of chopped garlic
  • Flax or olive oil
  • Sea salt and fresh ground pepper to taste

Chop vegetables into bite size pieces. Steam squash in a pot with a bit of water. Once the squash begins to get tender, add the remaining vegetables and garlic and steam until slightly tender. Remove from heat and add oil, salt, and pepper.
