This is especially helpful for people with diabetes, pre-diabetes or candida (yeast imbalance).

Ingredients:
  • 1.5 pounds of granny smith apples
  • 1 T lemon juice
  • 1/4 cup lakanto 1
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/3 cup of almonds for the almond flour (see note below)
  • 2 T coconut oil 1
  • 1/2 cup chopped almonds
Preparation:

Wash and chop the apples and remove the core. Place the chopped apples in a bowl and add the lemon juice and toss.

In a separate bowl, mix the lakanto, cinnamon, and nutmeg together. Sprinkle half of this mixture over the apples and toss to coat, save the rest to sprinkle on top before baking.

Place 1/3 cup of fresh raw almonds in a food processor and process into an almond flour. Cut in the coconut oil with the almond flour, the remaining sugar mixture and the chopped almonds.

Sprinkle the almond flour sugar mixture over the apples and bake in a roasting pan at 375 degrees for about 30 minutes.
