[vc_row css_animation=”” row_type=”row” use_row_as_full_screen_section=”no” type=”full_width” text_align=”left” box_shadow_on_row=”no”][vc_column][vc_column_text]I always do berry pies in the summer when berries are in season but at the end of the summer, the peaches are amazing so I decided to try my standard healthy and delicious pie recipe using peaches this time. This pie is now my new favorite!

For the Crust:

  • 2 cups of almonds
  • ½ cup of dates – soaked in water
  • Pinch of sea salt
  1. Soak dates in water for 10 – 15 minutes until soft.
  2. To make the pie crust, place almonds in a food processor until it forms a course flour.
  3. Remove the dates from the water and be sure to remove the pits from the dates.
  4. Add the dates and a pinch of salt to the almonds and process further.
  5. If the crust seems a bit too dry, add some of the date soaking water.
  6. Press the crust in a pie pan.

For the Filling:

  • 5 or 6 cups fresh peaches sliced into thin pieces
  • 3/4 cup pitted medjool dates, soaked
  • 1 tablespoon fresh lemon juice
  • Pinch of sea salt
  1. Place 1 1/2 cups of peach slices along with the dates, lemon juice and a pinch of salt in a blender, and process until smooth.
  2. Transfer to a mixing bowl, add the remaining sliced peaches and mix well.
  3. Pour the fruit filling into the crust and spread with a rubber spatula.
  4. Serve and enjoy!!!!
