Black Bean Dip
This recipe is from The Cancer Project’s book “The Cancer Survivor’s Guide” by Neal Barnard, MD. This is so good and so simple and the perfect thing to munch on while watching a football game or movie. The guys will love it too and they will have no idea it is actually healthy for them.
- 1 can black beans (or 1 1/2 cups cooked)
- 1 cup salsa
- 1/2 tsp ground cumin
- Combine all of the ingredients in a food processor or blender and process until smooth.
- Serve with baked tortilla chips and or fresh veggies or use as a filler for bean burritos or tacos. This will keep in the fridge for up to three days.
