Well, to avoid the high-fat dairy and processed sugar (or worse yet, the processed vegetable oils, high fructose corn syrup, and chemicals in non-dairy whipped topping), I decided to create a healthy yet satisfying alternative. You are sure to love this one!

 

Ingredients: 

  • 1 C raw cashews or macadamia nuts soaked for at least one hour
  • 1/3 C soaked dates
  • ¼ C date soaking water
  • 2 tsp vanilla

 

Preparation:

  1. Rinse and drain the cashews after soaking.
  2. Put all of the ingredients in a high-speed blender and blend into a whipped cream consistency.
  3. Dollop over fresh berries and enjoy!

 

Servings: 4 – 6
