Berries with Cashew Whipped Cream
I created this dessert one summer when I was craving fresh berries with whipped cream. Well, to avoid the high fat dairy and processed sugar (or worse yet the processed vegetable oils and high fructose corn syrup and chemicals of non-dairy whipped topping), I decided to create a healthy yet satisfying alternative. You are sure to love this one!
1 C raw cashews or macadamia nuts soaked for at least one hour
1/3 C soaked dates
¼ C date soaking water
2 tsp vanilla
Rinse and drain the cashews after soaking.
Put all of the ingredients in a high-speed blender and blend into a whipped cream consistency.
Dollop over fresh berries and enjoy!
