Well, to avoid the high-fat dairy and processed sugar (or worse yet, the processed vegetable oils, high fructose corn syrup, and chemicals in non-dairy whipped topping), I decided to create a healthy yet satisfying alternative. You are sure to love this one!
Ingredients:
- 1 C raw cashews or macadamia nuts soaked for at least one hour
- 1/3 C soaked dates
- ¼ C date soaking water
- 2 tsp vanilla
Preparation:
- Rinse and drain the cashews after soaking.
- Put all of the ingredients in a high-speed blender and blend into a whipped cream consistency.
- Dollop over fresh berries and enjoy!
