It ended up being a favorite for all of my clients and class attendees.

Ingredients:
  • 1 avocado
  • 1/2 cup almond milk, rice milk or any non-dairy milk
  • 1/3 cup of Lakanto or Zero natural sweetener (both have zero calories, zero insulin response and zero glycemic index)  Optionally, you may use dates soaked in water in place of the milk and sweetener as directed below.
  • 1/2 cup raw cacao powder or any our cocoa powder
  • dash of vanilla optional
Preparation:

If using a natural sweetener, place the milk and natural sweetener in a sauce pot and warm on the stove until the sweetener is melted. Set aside to cool.

Place avocado, cacao powder and vanilla in a food processor and add the sweetened milk and blend until smooth.

If you are using dates instead of a natural zero calorie sweetener, then soak the dates in water until soft and blend the soaked dates with some of the date soaking water with the avocado until smooth.  You may need to process a bit longer to get a smooth consistency.
