Ingredients:
  • 2 cups rice
  • 4 cups vegetable broth
  • a pinch of saffron
  • a small bunch of asparagus
  • 2 T olive oil
  • salt and pepper to taste
  • 2 T or more of pine nuts
  • fresh parsley
Preparation:

Cook the rice in the broth with a pinch of saffron as directed.

In a pan, saute asparagus and pine nuts in olive oil with salt and pepper.

Combine asparagus and pine nuts to the rice once it is done cooking.

Garnish with fresh parsley as desired.
