Greens with Pine Nuts and Raisins

This recipe is so incredibly easy and delicious; it should be part of everyone’s collection of favorite dishes.

Ingredients:
  • Large bunch of greens such as spinach, kale, collards, or swiss chard
  • 1 – 2 T olive oil, sesame oil or coconut oil (or you can water sauté by using a small amount of water in place of your cooking oil)
  • 2 T of pine nuts
  • 2 T of raisins or currants
  • Sea salt to taste – optional
Preparation:

Sautee nuts and raisins in oil until raisins are slightly soft and nuts begin to brown gently. Add greens and cook briefly until soft but still bright green.

Servings:

2 – 4
