Rustic Elegance Farm to Table Dinner

Experience an elegant farm-to-table dinner at SanaView Farms. We are taking the already loved farm-dinner experience and creating an evening of rustic elegance.
Chef Nicolas will be creating a fantastic multi-course meal for you, crafted with farm-fresh produce and other locally sourced ingredients.
Enjoy relaxing live music in the barn and out on the patio throughout the evening as you sip wine and surround yourself with good company.
Due to the complexity of the menu and the quality of the food he produces, we are limiting seating to the first 30 reservations. All proceeds go to the Westmoreland County Food Bank. Reserve your seats today. Dinner starts at 4 pm.
As every event is different, and as our chef works to create the best menu possible with in-season ingredients, our menus are not defined until a week or two before the event. We pick produce fresh for use in various salads and main-course dishes. We go to other local sources for the remaining ingredients.

Hors d’oeuvres – Appetizer
Gougères – A gougère, in French cuisine, is a baked savory choux pastry made of choux dough mixed with cheese.
Smoked trout canapè – Made with specially sourced local trout
Melon Prosciutto – cantaloupe and cured ham
Gazpacho – Soup
Lemon cucumber, farm egg, cherry tomatoes
Pickle beet, goat cheese mousse, coffee soil (Mixture of sugar, almond and all-purpose flour, coffee, cocoa, salt, and melted butter – baked in the oven then passed through a sieve.)
Roasted chicken breast, stuffed zucchini blossom with ratatouille, twice baked potato, lemon, tarragon jus
French Provençal stewed vegetable dish made from fresh produce from the farm.
Chambersburg Peach Parfait
Wild berries coulis (a thin fruit or vegetable puree, used as a sauce), meringue
Mignardises – A small bite-sized confectionery or savory appetizer
Canelé – a small French pastry flavored with rum and vanilla with a soft and tender custard center and a dark, thick caramelized crust.
Financiers – A financier is a small French almond cake, flavored with beurre noisette, usually baked in a small mold.
Madeleine – Madeleines are very small sponge cakes with a distinctive shell-like shape acquired from being baked in pans with shell-shaped depressions.
